Menu Plan Monday


I don't know how I got so off track last week, but I have a ton of carry-over. That's good, though, because this week is shaping up to be cra-a-a-a-zy.

Monday - Scott's favorite crock-pot chicken, with steamed honey carrots. (Slice up some carrots, steam 'em in the microwave for a couple of minutes, top with some butter and good squeeze of honey, stir to coat.)

Tuesday - 2 dinners (Scott is working late; Will has Tae Kwon Do) Peanut butter sandwiches, fruit and chips for the kids early; beef & broccoli for me & Scott later.

Wednesday - Shrimp Etouffee. I cannot even tell you how delicious this is. Purists may turn up their noses at using cornstarch & water to thicken instead of a roux, but you seriously cannot beat this recipe for being this delicious, quick and easy.

Thursday - We have a special program at church that I'm hoping to get to, so this will probably be our night to eat out. If that doesn't work out, I'll make something fabulous with chicken. Just off the cuff, 'cause I'm brilliant like that.

Friday - Marinated grilled flank steak
with baked potatoes or maybe these ranch potatoes wedges. And, hopefully, this crown of thorns bread: "I take frozen bread dough (saves time) and twist it into a braid and then into a circle making sure the ends are together.Then after it has risen the last time the children and I place the sharp round toothpicks all over the braid. Then we bake. Don't stick them in too far as you want it to look like a crown with thorns sticking out." (found here; scroll down)

Saturday - Cheese tortellini with marinara. Since it's (apparently) spring break in the non-homeschooling world, the kids don't have Tae Kwon Do or ballet, so I think we're going to see Horton Hears A Who. By the end of the day at the end of the week, I'm thinking I'll want something easy for dinner.

Sunday - Easter ham, macaroni & cheese, green beans, homemade rolls. (Might have that after church for lunch; if so, we'll do the standard breakfast for dinner.)

Your menu sounds delish! That crockpot chicken is one of my favorites! The shrimp etouffee sounds great, too. Have a wonderful week!
