Menu Plan Monday


We didn't really pig out for Easter, but I did eat enough ham (and ham soup for dinner) that it's kind of hard for me to imagine that I'm going to want food tomorrow. Nevertheless, I have faith that I will wake up hungry in the morning, just like I always do and that's what menu planning is all about, n'est-ce pas?

Monday - Cheese Tortellini with marinara sauce and salad. Quick, easy and child-friendly. Scott starts his year of working late today and it may take us a couple of weeks to figure out the best way to make dinner work.

Tuesday - Lemon Garlic Chicken over rice with carrots. Will has Tae Kwon Do and this is an easy crockpot dinner.

Wednesday - out to eat/church

Thursday - Ham & Cheese Quiche (probably PB sandwiches for the kids; I don't anticipate them trying quiche.) with a really good salad like you get when you go to a ladies' lunch place that serves quiche.

Friday - Chicken Parmesan over pasta with broccoli. Comfort food to wind down the week.

Saturday - Hamburgers, baked beans, french fries. I don't know if this will be a hit with the kids or not. Does homemade fast food count? Probably not, with my luck.

Sunday - Breakfast for dinner: migas & refried beans. Muy delicioso.

and I have never heard of Migas before but I am out and out stealing that from you! I love mexican food! And I love surprising my part mexican husband with mexican dishes that he has never had! LOL!

Wow, your week sounds delicious! We love quiche. I've found that if I make little, hand-sized ones in a muffin tin the kids just gobble them up, but not if it's a slice from a whole one. I have no idea what the difference is.

I love crock pot recipes and made a note of your lemon garlic chicken. Looks yummy and easy (2 of my fav's!). Rest of your menu looks grand, I love a good quiche.
