i never peel the apple. just wash it good and enjoy the fiber & vitamins :). okay, in the RARE event i have a guest that would want the apple peeled - vegetable peeler.
Why risk slicing your thumb off, when a vegetable peeler can simply and easily remove the peel? Plus I find it much easier to end up with an elegant ribbon of peel that way. (I'm not sure why that seems like a worthy accomplishment to me, but I'm always a little impressed with myself when I get it done.)

Just a knife here. Simple and fast. I use a knife on potatoes too, FWIW.
