Meal Plan Monday, week of June 22
I have a couple of carry-over meals from last week, but that's okay!
Sunday--Flank Steak, spiral rosemary potatoes, corn on the cob. Oooh, the potatoes were pretty yummy!! I used my Pampered Chef apple corer-peeler-slicer to, um, core, peel and slice four red potatoes into spirals, piled them on my medium bar pan, then drizzled them with extra-virgin olive oil, a sprinkle of Tastefully Simple garlic-garlic and a sprinkle of Pampered Chef rosemary seasoning. Oh, and salt; of course, salt. Then I roasted them at 400 degrees until everything else was ready. (maybe 20 minutes? I would have liked to give them just a little longer to get them nice and crunchy)
Monday--Beef & Broccoli over rice
Tuesday--Scott's favorite crockpot chicken, steamed asparagus
Wednesday--Red Beans and Rice with greens and cornbread
Thursday-- romantic dinner out for our anniversary
Friday--chicken soft tacos with black beans and corn (hopefully made into some kind of salsa-like condiment)
Saturday--Spaghetti & meatballs, salad, homemade french bread
