Meal Plan Monday, week of June 4
In the last week or so I've gotten completely addicted to a handful of homeschool blogs (and by that I mean at least two dozen). In addition to discussing life as homeschoolers, they often share memes. (Memes rhymes with themes, which is a decent definition of what a meme is.) There is "Grains of Gratitude" which crops up (ew, bad pun!!) on Sundays, Meal Plan Monday, Tackle it Tuesday, Works for Me Wednesday and also Wordless Wednesday, which is just posting a picture, Slow-Cooker Thursday and Thankful Thursday, and finally Favorite Ingredient Friday. Or is it Freezer Friday? Maybe both. I'm telling you, it's a lot to keep track of. :) I don't know how many I'll do, or how often I'll do it, but if you're curious what we're eating this week, read on...
Monday is crockpot night because of Karate, so we're having Scott's Favorite Crockpot Chicken over rice.
Tuesday: We'll be out and about all day so we're doing "quick & easy" chicken tenders, mac & cheese and field peas. I got the field peas at the Farmers Market in Little Rock last summer and I have hoarded them as if they were gold. It's time to eat 'em or lose 'em.
Wednesday is another Karate/crockpot night, so we're having Mexican Beef and Beans (recipe below) and a green salad.
Thursday is Chicken Nachos because I just can't get enough Mexican food! :)
Friday is Spaghetti and Meatballs.
Saturday is Teri-Beef and Rice, one of our favorite meals from living in Hawaii. I might try to put together a Hawaiian themed dinner together for that night, maybe add sweet potatoes or mac salad and haupia (check the link, Nana; it's Sam Choy!!) or something, because the rest of the week is not gonna win me any Creativity in the Kitchen awards.
Mexican Beef and Beans
* 1 can (15 ounces) Ranch style beans or pinto beans
* 1 can cream of mushroom soup
* 1 can cream of chicken soup
* 1 can Rotel tomatoes (with juice)
* 1 lb. ground beef or turkey, browned with chili
powder and garlic powder to taste, then drained
* 16 oz. Velveeta cheese, cubed or shredded
Place ingredients in slow cooker in order given. Cook
3 to 4 hours on low.
Serve with chips and salad. Serves 4 to 6.
