Monday - Scott is off work today, so he's making dinner. All I know is it's some kind of chicken dish in the crockpot.
Tuesday - Crockpot lasagna (since we didn't have lasagna, crockpot or otherwise, for Scott's birthday)
Wednesday - out to dinner/church
Thursday - red beans & rice, spinach and cornbread
Friday - 7-up Steak over rice with broccoli
Saturday - homemade pizza with a rockin-yummy salad (romaine lettuce, chopped Genoa salami, roasted red peppers, marinated artichoke hearts, olives (ick) and some kind of creamy Italian-y dressing. There was a teeny little Italian place in Honolulu that had the perfect dressing; what I would give for a jar of it right now!)
Sunday - Breakfast for dinner. Hopefully French toast.

Sounds good- especially that salad! :) Any chance you could Google for a copy cat of that dressing you're craving? Or was the place too small for something like that?
Thursday was going to be Red Beans & Rice day at our house, too -- until my mother-in-law brought us a homemade, frozen chicken pot pie!

Looks tres yummy Wendy! If you happen upon a recipe for that dressing, make sure that you post it! I see I'm not the only one who would like it.
That manicotti actually made my mouth water when I saw it linked to on a friend's bi-weekly menu. I actually can't wait to try it, although I will be replacing the ricotta with cottage cheese. Even for the non-cottage cheese fans in my house, they prefer it over ricotta!
Great menu! I wish my hubby cooked (even if it were in a crock pot!) lol :)
